Description
This simple vegan pie has a homey feel and a charming old-fashioned quality. Exact proportions aren't necessary; everything can be done by eye. Instead of using yeast dough, you can opt for store-bought puff pastry, especially if you're not strictly observing a fast. Leftover mashed potatoes from yesterday will work perfectly for the filling, but be sure to add plenty of sautéed onions and, preferably, some dill just before baking. You'll need a lot of onions—two whole bulbs—as they are a key ingredient alongside the potatoes, helping to avoid the common pitfall of vegan baked goods: excessive density and dryness.

- Water - 10 fl oz
- Wheat Flour - 21.2 oz
- Dry yeast - 0.2 oz
- Sugar - 1 tablespoon
- Potato - 2 lbs
- Onion - 2 heads
- Dill - 1.8 oz
- Vegetable Oil - 6 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dissolve the yeast and sugar in warm water. Let it sit for a few minutes until a froth forms on the surface.
Step 2
In the mixing bowl, add the flour, 125 ml of vegetable oil, 0.5 teaspoons of salt, and the yeast dissolved in water. Knead the dough using the dough hook attachment.
Step 3
Cover the dough with plastic wrap and place it in a warm spot for 1 hour.
Step 4
Peel the potatoes, cut them into large pieces (or leave them whole) and boil until tender. To check if the potatoes are ready, pierce one with a knife: if it slides off easily, they are done.

Mash the cooked potatoes into a rough puree, leaving some chunks for texture.

Dice the onion and sauté it in vegetable oil until golden brown.

Finely chop the dill.
Step 8
Add dill and fried onions to the potatoes, season with salt and pepper, and mix well.

Divide the risen dough into two equal parts and roll it out thinly.

Place one portion of the dough on a greased baking tray, spread the potato filling on top, and cover it with a second layer of dough.
Step 11
Seal the edges in a decorative manner; if desired, you can decorate the pie with scraps of dough. Place the pie in an oven preheated to 356°F (350 degrees Fahrenheit) for 25–30 minutes, or until the pastry is golden brown.
