Prague Nut Cake
Ingredients
- Whole egg - 6 pieces
- Sugar - 2.1 oz
- Egg white - 4 pieces
- Ladyfinger Cookies - 3.5 oz
- Peeled chestnuts - 3.5 oz
- Baking Powder - 1 teaspoon
- Butter - 5.3 oz
- Vanilla salt - 0.7 oz
- 33% Cream - 7 fl oz
- Powdered Sugar - 10.6 oz
Step by Step guide
Step 1
Grind the nuts and cookies in a blender until fine crumbs.
Step 2
Beat 4 yolks with sugar, and separately beat 4 whites with 50 grams of powdered sugar.
Step 3
Carefully fold the yolks into the whites, then add the nuts, cookies, and baking powder.
Step 4
Pour the batter into a greased pan, smooth the surface with a spatula, and bake the cake at 347°F for 35 minutes. Once completely cooled, cut the cake in half.
Step 5
For the cream, beat softened butter with 2 yolks, 100 grams of powdered sugar, and 20 grams of vanilla sugar, spread it on the bottom cake layer, cover with the second layer, and top with glaze: mix 150 grams of powdered sugar with 2 tablespoons of hot water.
Step 6
Decorate the cake with whipped cream and walnut halves.
