Description
German pretzels are made with a variety of different toppings; the simplest ones, sprinkled with coarse salt, pair perfectly with beer.
Ingredients
- Wheat Flour - 7.1 oz
- 3.2% Milk - 2 fl oz
- Salt - 0.6 oz
- Butter - 0.4 oz
- Sugar - 0.1 oz
- Dry yeast - 0.2 oz
- Rock Salt - 1 tablespoon
- Egg white - 1 piece
- Activated Baking Soda - 2.5 oz
Step by Step guide
Step 1
Sift the flour, add sugar and 4 grams of salt. Also, add room temperature butter to the flour, and crumble in the pressed yeast. Pour in the milk and an equal amount of water. The richer the milk, the tastier the bread will be. If you are using lower-fat milk, you can replace the water with milk.
Step 2
Knead the dough until it is smooth and elastic — this can be done using a mixer, a dough hook, or by hand, and will take about 15 minutes. Let it sit in a warm place for 20–30 minutes.
Step 3
Divide the dough into six pieces, each weighing about 60 grams. Roll them into bars and let them rest for 10 minutes.
Step 4
Bring a liter of water to a boil, add baking soda and 14 grams of salt, and stir. Roll each piece of dough into a sausage shape, take one side and press it towards the center, then take the other side and press it to the center as well, then fold the sausage in half and press it again. Roll out a long sausage, about 20 centimeters. Twist it into a pretzel shape. Repeat the same process with the remaining dough.
Step 5
Place the pretzels one by one into gently boiling water, hold them for 1–2 minutes, then carefully turn them with a slotted spoon and keep them in the water for another minute. As a result, the pretzels should swell to twice their size. Transfer them to a baking sheet lined with parchment paper or a rack, immediately brush with beaten egg white, and generously sprinkle with coarse salt.
Step 6
Place the baking sheet in the preheated oven at 392°F for 15 minutes. The pretzels should turn a nice golden brown during this time.
