Profiteroles with Cream Cheese Filling
Ingredients
- Wheat Flour - 1 cup
- Butter - 4.4 oz
- Farm fresh eggs - 5 pieces
- Water - 1 cup
- Salt - ¼ teaspoon
- Semi-soft cream cheese - 14.1 oz
- Heavy cream - 8 fl oz
- Powdered Sugar - 3.5 oz
- Vanilla salt - 0.3 oz
- Fresh Berries - 5.3 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a saucepan with a thick bottom, pour in 1 cup of water (250 ml), add the butter and salt, and bring to a boil. As soon as the water boils and the butter melts, immediately add all the flour and cook for 2-3 minutes while constantly stirring.
Step 3
Remove from heat, stir, and let cool to warm. Add the eggs one by one, mixing thoroughly.
Step 4
Once the dough starts to stretch, stop adding eggs.
Step 5
Using a piping bag or a teaspoon, place the dough on a baking sheet lined with a silicone mat or parchment paper. Place the baking sheet in an oven preheated to 365°F. After 15 minutes, when the profiteroles rise and brown, reduce the temperature to 320°F. Do not open the oven door. Bake for another 25 minutes.
Step 6
Remove the profiteroles and place them to cool.
Step 7
Place the cream cheese in a bowl, mix with a mixer, add powdered sugar and vanilla sugar, and whip.
Step 8
Whip the chilled heavy cream with a mixer.
Step 9
Combine the cream cheese mixture and the whipped cream, gradually adding the cream to the cheese and gently folding the creamy mixture with a spatula using an upward motion.
Step 10
Cut each profiterole from one side, fill it with cream, adding a few berries. When serving, sprinkle with powdered sugar.
