- Egg white - 6 pieces
- Vanilla salt - 1 teaspoon
- Grated Ginger Root - ½ teaspoon
- Salt - 0.1 teaspoons
- Meyer Lemon Juice - ½ teaspoon
- Grated Ginger Root - 3.5 oz
- Milk - 1 cup
- 33% Cream - ½ cup
- Whole egg - 4 pieces
- Sugar - ½ cup
- Orange zest - to taste
Step by Step guide
Step 1
Whip the egg whites with vanilla, ground ginger, lemon juice, and salt on low speed until foamy. Increase the speed and gradually add sugar, whipping until a thick mass forms.
Step 2
In a wide pot, bring water to a boil over low heat. Using 2 tablespoons, scoop the whipped egg whites, shaping them into oval forms, and drop them into the water. Cook on each side for 2 minutes until set. Remove with a slotted spoon and transfer to a sieve to drain.
Step 3
For the sauce, combine milk with thinly sliced ginger and cream in a pot. Bring to a boil, then remove from heat. Let it sit for half an hour.
Step 4
In a bowl, whip the yolks with sugar, then pour in the strained milk with ginger, and heat until the cream thickens.
Step 5
Arrange the 'snowballs' on 6 plates (3 pieces each) and drizzle with ginger sauce. Sprinkle the dessert with orange zest.
