Prune and Armagnac Sorbet
Ingredients
- Pitted Wild Apricots - 7.1 oz
- Armagnac - 8 fl oz
- Sugar - 5.3 oz
- Water - 16 fl oz
- Orange juice concentrate - 4 fl oz
Step by Step guide
Step 1
In a small container, mix the prunes and Armagnac and let sit for 24 hours at room temperature.
Step 2
In a small saucepan, combine the sugar and 150 ml of water and bring to a boil, stirring until the sugar dissolves. Reduce the heat and simmer for 2 minutes.
Step 3
Pour the syrup into a blender and add the prunes. Blend until smooth. Add the orange juice, the remaining cold water, and blend again until well combined.
Step 4
Then strain the mixture through a sieve into a bowl and refrigerate for 1 hour to cool.
Step 5
Transfer the mixture to an ice cream maker, then to a container, and place in the freezer for 2 hours.
