Ingredients
- Wheat Flour - 17.6 oz
- Chicken Egg - 1 piece
- Vodka - 1 tablespoon
- Vinegar essence - 3 teaspoons
- Butter - 7.1 oz
- Water - 1 cup
- Salt - a pinch
Step by Step guide
Step 1
Crack the egg into a cup, add vodka (the dough will become fluffier). Pour in water so that the total liquid volume is 250 ml.
Step 2
Pour into a bowl, add vinegar, salt, and mix.
Step 3
Sift the flour while gradually kneading the dough.
Step 4
Knead the dough on the table for another 5-7 minutes.
Step 5
Wrap the dough in plastic wrap and leave it at room temperature for 30 minutes.
Step 6
Roll out the butter between two sheets of parchment paper and refrigerate for 15 minutes along with the dough.
Step 7
Roll out the chilled dough into a rectangle measuring 30x25 cm. Place the butter slab on the dough so that it covers 2/3 of the area.
Step 8
Fold the dough into thirds: the side without butter is folded first, then the second edge of the dough with butter goes on top.
Step 9
Chill for 20 minutes.
Step 10
Place the dough with the short side facing you, and carefully roll it out to a thickness of 10 mm. Rotate it 90 degrees and fold it into thirds.
Step 11
Chill the dough for 15-20 minutes between rolling.
Step 12
Repeat the rolling process 4-5 times.
Step 13
This dough can be used immediately or frozen.
