Step by Step guide

Step 1

Prepare the dough. Sprinkle sugar on the work surface and lay out the sheets of puff pastry. Allow the dough to thaw. Sprinkle the work surface with sugar again, flip the dough over, and roll it out into a rectangle (20x30 cm), constantly flipping it. Fold the sheet from both sides towards the center several times until the sides meet in the middle. Lightly sprinkle the dough with sugar, cover it with a napkin, and place it in the refrigerator for 30 minutes.

Step 2

Bake. Preheat the oven to 428°F. Place a metal baking dish filled with water in the oven to ensure the puff pastry cookies turn out airy. Spray the baking sheet with cold water. Remove the dough from the refrigerator, and carefully cut the 'log' into equal portions with a sharp knife. Place the ears on the baking sheet with enough space between them.

Step 3

Bake on the middle rack for 8–10 minutes until golden brown, then flip the cookies and bake for another 8–10 minutes. After baking, let cool.
