Description

If you don't have time to make puff pastry from scratch, you can use a package of store-bought dough.

Ingredients

  • Wheat Flour - 19.4 oz
  • 3.2% Milk - 13 fl oz
  • Butter - 2.1 oz
  • Chicken Egg - 2 pieces
  • Suluguni Cheese - 10.6 oz
  • Imeretian cheese - 10.6 oz
  • Sugar - 0.4 oz
  • Coarse Salt - 0.4 oz
  • Dry yeast - 0.2 oz

Dissolve the yeast in a small amount of warm milk, add sugar, one egg, and a little flour (to taste, until the mixture reaches a thick consistency), mix everything by hand or with a whisk, and let the dough rise in a warm place for half an hour. In the meantime, sift the remaining flour, add coarse salt, and incorporate 20 grams of butter.

Once the dough has risen, add it to the flour mixed with oil, pour in the remaining milk, and knead a thick dough. Cover it with plastic wrap and place it in the refrigerator. After an hour and a half, when the dough has risen, take it out and divide it into portions weighing about 70 grams.

Dust the board with flour and roll out portions of dough in all directions with a rolling pin until you achieve fairly thin squares. Fold the dough in half and roll it out thinly again; repeat this process three times. If necessary, sprinkle a little flour to prevent the dough from sticking to your hands and the board.

Cut the cheese into large chunks and grate it. Add 20 grams of butter to soften the flavor and one egg for binding — this will help the cheese hold together during baking and prevent it from leaking. Mix thoroughly, but the consistency should remain loose. Place 60 grams of filling onto squares of dough and seal the edges to form an envelope.

Bake in the oven preheated to 428°F for fifteen to twenty minutes. Melt the remaining butter on the stove or in the microwave, and use a pastry brush to glaze the browned crust for a more appetizing appearance. Serve immediately: the puffs should be eaten warm.
