Pumpkin Bread with Ginger

Ingredients

  • Butter - 6.2 oz
  • Honey - 4 fl oz
  • Chicken Egg - 1 piece
  • Pumpkin - 17.6 oz
  • Muscovado Sugar - 3.5 oz
  • Self-rising flour - 12.3 oz
  • Demerara Sugar - 2 tablespoons
  • Grated Ginger Root - 1 tablespoon

Step by Step guide

Step 1

Preheat the oven to 356°F. Grease a 1.5 kg loaf pan with butter and line the sides with strips of baking paper.

Step 2

Peel the pumpkin and remove the seeds. Grate it on a fine grater (you should get about 250 grams of pumpkin).

Step 3

In a bowl, mix the softened butter, honey, and beaten egg. Then add the pumpkin, muscovado sugar, flour, and ginger.

Step 4

Mix well and pour into the prepared pan. Sprinkle with demerara sugar on top and bake for 50-60 minutes until done. Remove from the oven and let it sit for 5 minutes. Transfer to a plate and slice. Serve with butter.
