- Pumpkin - 14.1 oz
- Puff Pastry - 10.6 oz
- Sugar - 7.1 oz
- 10% cream - 1 fl oz
- Cinnamon - 1 tablespoon
- Nutmeg - a pinch
- Salt - a pinch
- Ginger - 0.7 oz
- Butter - 1.8 oz
- Chicken Egg - 3 pieces
Step by Step guide
Step 1
Sauté finely chopped pumpkin flesh with grated ginger in butter, stirring constantly, until it turns into a puree. For an ultra-smooth consistency, you can blend the pumpkin in a blender.
Step 2
Combine the finished puree with sugar, salt, cinnamon, nutmeg, and crushed anise seeds, which should be ground in a mortar beforehand.
Step 3
Whip the cream with the eggs until smooth, then fold this mixture into the spiced pumpkin puree.
Step 4
Roll out the puff pastry to a thickness of 2–3 mm, place it on a baking sheet, and evenly spread the mixture of pumpkin, eggs, and cream over the surface of the pastry. Fold the edges of the pastry over. Bake the pie in an oven preheated to 392°F for fifteen to twenty minutes. After baking, let it cool slightly to allow the filling to set properly.
