Ingredients
- Wheat Flour - 1 1/10 cups
- Wheat Flour - 1 cup
- Baking Powder - 1 teaspoon
- Activated Baking Soda - 1 teaspoon
- Salt - a pinch
- Chestnut puree - 1 cup
- Vanilla extract - 1 teaspoon
- Brown Sugar - ¾ cup
- Vegetable Oil - ½ cup
- Farm fresh eggs - 3 pieces
- Light Corn Syrup - 2 tablespoons
- Ricotta cheese - 8.8 oz
- Caramel Syrup - 0.6 cups
- Chocolate Sauce - ½ cup
- Chopped almonds - 1 cup
- Granulated sugar - ½ cup
Step by Step guide
Step 1
In a bowl, mix the all-purpose flour, reserving 1 tablespoon, whole wheat flour, baking soda, baking powder, and a pinch of salt.
Step 2
In another bowl, combine the pumpkin puree, vanilla, vegetable oil, 2 eggs, granulated sugar, and 0.5 cups of brown sugar.
Step 3
Mix both mixtures into a uniform batter.
Step 4
In a third bowl, mix the ricotta, 0.25 cups of brown sugar, corn syrup, 2 tablespoons of caramel sauce, the remaining egg, and the reserved tablespoon of flour.
Step 5
Preheat the oven to 356°F.
Step 6
Pour half of the pumpkin batter into a greased loaf pan, then carefully add the ricotta mixture, and top with the remaining batter.
Step 7
Bake until done, checking with a toothpick, for about 60 minutes.
Step 8
Cool and drizzle with caramel and chocolate sauce. Sprinkle with nuts.
