Pumpkin Cheese Buns
Ingredients
- Pumpkin - 2.6 oz
- Water - 1 fl oz
- Wheat Flour - 8.8 oz
- Milk - 5 fl oz
- Dry yeast - ½ teaspoon
- Sugar - 3 tablespoons
- Salt - ½ teaspoon
- Chicken Egg - 1 piece
- Butter - 1.1 oz
- Cheese - 2.5 oz
- Egg Yolk - 1 piece
Step by Step guide
Step 1
Prepare the pumpkin puree. For this, finely chop 50 grams of pumpkin, place it in a saucepan, add water, and cook until soft. Blend with an immersion blender until smooth. Let it cool.
Step 2
Knead the dough. Dissolve the dry yeast and sugar in warm milk, and leave it in a warm place to activate. Once bubbles form on the surface, you can start kneading the dough. Sift the flour into a bowl, add salt, crack in the egg, add melted butter, and pour in the milk with the activated yeast. Mix the flour mixture with a wooden spoon. When mixing becomes difficult, transfer the dough to a floured surface and knead until you have an elastic, soft dough that does not stick to your hands.
Step 3
Grate the cheese and pumpkin on a fine grater.
Step 4
Divide the prepared dough into two equal parts. In one part, add the grated cheese and knead until homogeneous. This will be the cheese dough. Shape it into a ball, place it in a bowl, cover with a cloth, and let it rise in a warm place for 1.5 hours.
Step 5
In the second part of the dough, add 3 tablespoons of pumpkin puree and the grated pumpkin. Knead until homogeneous, adding another 4 tablespoons of flour. This will be the pumpkin dough. Also shape it into a ball, place it in a bowl, cover with a cloth, and let it rise in a warm place for 1.5 hours.
Step 6
Once the cheese dough has risen, place it on a floured surface, punch it down, and roll it out to a thickness of about 5 millimeters. Use a glass with a diameter of about 6 centimeters to cut out circles from the rolled dough, and then use a shot glass with a diameter of about 2 centimeters to cut out small circles in the center of these larger circles. Do the same with the pumpkin dough.
Step 7
Place a small circle of cheese dough in the center of a large circle of pumpkin dough, and a small circle of pumpkin dough in the center of a large circle of cheese dough. Stack one circle on top of the other, pressing down slightly. Form the remaining buns in the same way and place them on a baking sheet with some space between each.
Step 8
Lightly beat the yolk with milk. Brush the formed buns with the yolk mixture, cover with a cloth, and let them rest for 20 minutes in a warm place.
Step 9
Bake the buns in a preheated oven at 356°F for about 20–25 minutes, until golden brown and cooked through.
