Pumpkin Diet Semolina Cake
Ingredients
- Pumpkin - 21.2 oz
- Semolina - 1.8 oz
- Semi-soft cream cheese - 8.8 oz
- Chicken Egg - 3 pieces
- Cinnamon - a pinch
- Sugar Substitute - to taste
Step by Step guide
Step 1
Peel the pumpkin, cut it into small pieces, place them in a pot, add 150 ml of water, and simmer until soft (about 20-30 minutes). I infused stevia leaves and simmered in that.
Step 2
In a bowl, whisk the eggs until frothy.
Step 3
Add the soft cottage cheese (I used Valio 0%) and continue whisking. At this stage, you can add a sweetener to taste (tablets, 2–3 tablespoons of Jerusalem artichoke syrup, or 2–3 tablespoons of honey, your choice).
Step 4
Add semolina and soft pumpkin to the bowl and whisk everything until smooth, then add spices.
Step 5
Preheat the oven to 338°F (during this time, the semolina will absorb some moisture).
Step 6
Bake for 40–50 minutes until golden brown. Serve warm or chilled.
