Description

For added health benefits, you can add crushed pumpkin seeds (1/2 cup) during the dough mixing stage after all the ingredients have been combined.

Ingredients

  • Butter - 3 oz
  • Raw cane sugar - 4.4 oz
  • Water - 2 fl oz
  • Pumpkin - 1 glass
  • Wheat Flour - 1 glass
  • Cinnamon - ¼ spoons
  • Vanilla extract - ½ spoons
  • Activated Baking Soda - 0,3 teaspoons
  • Ocean salt - a pinch

Step by Step guide

Step 1

Preheat the oven to 356°F. Line a baking tray with silicone-coated parchment paper.

Step 2

Using a spoon, cream the softened butter or coconut oil at room temperature with the sugar. Gradually add the pumpkin flour to the creamed mixture and stir. Slowly incorporate warm water into the green mixture, mixing gently, but do not blend until smooth.

Step 3

Then add the wheat flour, cinnamon, vanilla extract, salt, and baking soda. Mix everything thoroughly and knead a soft dough by hand. If the dough continues to crumble and doesn't come together, add 1 tablespoon of warm water at a time.

Step 4

Roll out the prepared dough on a floured surface to a thickness of 5–7 mm. Cut out cookies using a glass or various cookie cutters.

Step 5

Transfer the cookies to a baking sheet and place them in the oven for 12-15 minutes if you want them to be soft and crumbly, or for 20 minutes if you prefer them to be crispy.

Step 6

Allow the hot pastry to cool on a flat surface so it retains its shape.

Step 7

Pour the hot herbal tea into cups and dip the cookies in it.
