Description
You can use regular pumpkin, but butternut squash is better. Use any herbs, such as parsley, dill, or mint. Coarse flour can be substituted with regular flour.
Ingredients
- Pumpkin - 14.1 oz
- Herbs - 0.7 oz
- Scallions - 1 piece
- Coarsely Ground Rye Flour - ½ cup
- Feta cheese - 1.8 oz
- Chicken Egg - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Tzatziki sauce - to taste
- Vegetable Oil - 2 tablespoons
Step by Step guide
Step 1
In a bowl, mix 2 cups of grated pumpkin, chopped herbs, finely chopped green onion, crumbled feta, flour, and egg. Season with salt and pepper and mix well.
Step 2
Heat vegetable oil in a skillet.
Step 3
Drop 1 tablespoon of the mixture onto the skillet, leaving some space between each fritter, and fry for about 4 minutes on each side until cooked through and golden brown.
Step 4
Serve with tzatziki.
