- Pumpkin - 35.3 oz
- Mandarins - 7.1 oz
- Kumquat - 3.5 oz
- Sugar - 7.1 oz
- Brown Sugar - 5.6 oz
- Ground Cinnamon - 1 teaspoon
- Vanillin - 1 teaspoon
- Water - 12 fl oz
- Chopped almonds - 2 tablespoons
- Fresh Mint - 1 bunch
- Lemon - 1 piece
Step by Step guide
Step 1
Cut the pumpkin into cubes, slice the kumquat into 4 pieces (do not peel), separate the mandarins into segments (peel them), and remove the seeds. Mix everything in a saucepan, add sugar, lemon juice, cinnamon, vanilla, and water.
Step 2
Bring to a boil and simmer over medium heat for 30–40 minutes (until the water has evaporated by half and the consistency is like syrup). Remove from heat, let cool, and refrigerate overnight.
Step 3
Add chopped nuts (chop by hand with a knife, blending will turn them into crumbs), and garnish with mint.
