Ingredients
- Peanut Sprouts - 3.5 oz
- Pumpkin - 17.6 oz
- Scallions - 3.5 oz
- Soy Sauce - 2 spoons
- Chicken Egg - 2 pieces
- Sherry - 1 tablespoon
- Wheat Flour - 5.3 oz
- Sugar - 1 tablespoon
- White Pepper (whole) - a pinch
- Peanut Butter - 3 fl oz
Step by Step guide
Step 1
Toast the peanuts in a dry skillet for three to five minutes, then crush them in a mortar and let them cool. You can also let them cool first and then crush.
Step 2
Sift the flour and mix it with sugar, a pinch of white pepper, sherry, soy sauce, and eggs.
Step 3
Grate the pumpkin on a coarse grater, chop the green onions roughly, and mix them into the batter.
Step 4
Heat peanut oil in a skillet, spoon in not-too-thick pancakes made from pumpkin mixed with onion and batter, and fry on both sides until cooked through.
