Pumpkin Roll with Cheese Filling
Ingredients
- Sugar - 5.3 oz
- Farm fresh eggs - 3 pieces
- Pumpkin - 5.3 oz
- Salt - 1 teaspoon
- Activated Baking Soda - 1 teaspoon
- Ground Cinnamon - ½ teaspoon
- Powdered Sugar - ½ teaspoon
- Semi-soft cream cheese - 7.9 oz
- Margarine - 2 tablespoons
- Nuts - ⅓ cup
- Powdered Sugar - 1 cup
- Wheat Flour - ¾ cup
Step by Step guide
Step 1
Beat the eggs and granulated sugar with a mixer, gradually adding finely chopped pumpkin.
Step 2
To prepare the dough, add flour, baking soda, salt, and cinnamon to the mixture and mix thoroughly.
Step 3
Spread the dough onto parchment paper in a baking pan and place in a preheated oven (347°F) for 15 minutes.
Step 4
Remove the cake from the oven, sprinkle with powdered sugar, and, flipping it over, place it face down on a kitchen towel. Remove the paper from the back of the cake, sprinkle with powdered sugar, and flip it again onto the towel.
Step 5
Wrap the cake in the towel and place it in the refrigerator for 1 hour, then in the freezer for 15 minutes.
Step 6
Mix the cream cheese, margarine, crushed nuts, vanilla sugar, and powdered sugar with a mixer for the filling.
Step 7
Spread the filling onto the slightly frozen cake and carefully roll it up.
Step 8
The finished roll can be frozen and stored in the freezer for up to 4 months.
