Pumpkin Seed Candies

Ingredients

  • Shelled pumpkin seeds - 4.2 oz
  • Sugar - ¼ cup
  • Honey - 6 tablespoons
  • Butter - 5 tablespoons

Step by Step guide

Step 1

In a well-heated skillet, toast the seeds until golden, about 3 minutes. Transfer to a bowl and let cool.

Step 2

In a saucepan, combine sugar and honey. Bring to a boil and cook for 3 minutes, stirring until the sugar dissolves. Add the seeds and cook for another 3–4 minutes, until the caramel reaches about 284°F. Remove from heat and add 3 tablespoons of cooled butter. Mix well.

Step 3

Cool the mixture to 239°F, about 4 minutes.

Step 4

Meanwhile, use the remaining softened butter to grease 15 paper candy molds, approximately 2.5–3 cm in diameter.

Step 5

Place 1 tablespoon of the caramel mixture into each mold.

Step 6

Optionally, wrap in decorative cellophane.
