Pumpkin Vegan Pie "Amber"
Ingredients
- Pumpkin - 21.2 oz
- Brown Sugar - 1 cup
- Raisins - 6.7 oz
- Wheat Flour - 10.6 oz
- Baking Powder - 0.9 oz
- Activated Baking Soda - 2 teaspoons
- Brandy - 1.8 oz
- Ground Cinnamon - ½ teaspoon
- Ground clove - ¼ teaspoon
- Honey - 2 tablespoons
- Oranges - 1 piece
Step by Step guide
Step 1
Peel the pumpkin from the skin and seeds, and cut it into cubes about 1.5x1.5 cm. Add sugar and brandy.
Step 2
Grate the zest of the whole orange (without the white layer!).
Step 3
Juice the 'bald' orange, add cinnamon, cloves, and honey. Mix this with the pumpkin. Place in the microwave for 1-2 minutes on maximum power - this is necessary to melt the honey and for the pumpkin to release some juice (this will make it easier to mix). Add the raisins.
Step 4
Gradually add the sifted flour and baking powder (or baking soda) to the prepared aromatic mixture, stirring until smooth.
Step 5
Grease the baking dish and lightly dust with flour, pour in the batter and bake in a multicooker for 1 hour and 10 minutes or in the oven at 175-180°C for 1 hour (check for doneness with a wooden stick).
Step 6
Decorate with powdered sugar. Enjoy your tea time!
