Description

Queen of Puddings is truly a royal pudding: it was created in the 18th century for Queen Victoria. The creaminess of the custard combines with the aromas of lemon zest and vanilla, while the generous amount of meringue gives the dessert a festive appearance. Our version features plum jam, but you can also try making this pudding with your favorite jam or marmalade.

Ingredients

  • Butter - 2.1 oz
  • Milk - 27 fl oz
  • Vanilla extract - ½ spoons
  • Sugar - 3.9 oz
  • Whole egg - 5 pieces
  • Breadcrumbs - 8.5 oz
  • Lemon - 2 pieces
  • Raspberry gin - 8.1 oz
  • Egg white - 5 pieces
  • Powdered Sugar - 3.9 oz

Pour the milk into a saucepan.

Add the oil and vanilla extract.

Add the zest of two lemons and bring to a gentle boil.

Beat the egg yolks with sugar until they turn pale.

While continuing to whisk, slowly pour in the hot milk and vanilla mixture.

Then add the bread crumbs and mix on low speed until a thick mixture forms.

Grease a baking dish with butter, pour the batter into it, and place it in the oven preheated to 320°F for 15-20 minutes. Then remove it and let it cool, while increasing the oven temperature to 190 degrees.

Using a mixer, beat the egg whites with powdered sugar until stiff peaks form. Spoon the meringue onto the pudding.
