Description
Quiche Lorraine, an open pie from Lorraine, loved throughout France and beyond.
Ingredients
- Wheat Flour - 10 oz
- Butter - 5 oz
- Salt - 1 tablespoon
- Chicken Egg - 3 pieces
- Gruyère cheese - 5 oz
- 10% cream - 10 fl oz
- Ground Black Pepper - ¼ spoons
- Nutmeg - ¼ spoons
- Bacon - 5 oz
Step by Step guide
Step 1
Mix the cold butter with the flour and salt until crumbly.
Step 2
Then add 1 egg and a tablespoon of cold water, and knead the dough.
Step 3
Shape it into a thick disc, wrap it in plastic wrap, and refrigerate for an hour.
Step 4
Mix the remaining eggs with the cream and grated cheese.
Step 5
Add freshly ground pepper, salt to taste, and nutmeg.
Step 6
Sauté the chopped bacon over low heat for 12 minutes, then cool it and add it to the egg mixture.
Step 7
Preheat the oven to 375°F. Roll out the dough and transfer it to the baking dish, trimming any excess.
Step 8
Cover the dough with foil, pour beans on top, and place it in the oven for 20 minutes. Then remove the beans and the paper, and return the crust to the oven to brown, which will take about 15 minutes.
Step 9
Reduce the oven temperature to 330°F and pour the filling over the crust.
Step 10
Bake until the filling is set, about 20 minutes.
