Description

This quiche filling contains a large amount of garlic, but its flavor is greatly softened during the cooking process.

Ingredients

  • Wheat Flour - 8.8 oz
  • Butter - 1.8 oz
  • Salted Butter - 5.3 oz
  • Olive Oil - 1 tablespoon
  • Chicken Egg - 5 pieces
  • Garlic - 10 heads
  • Goat cheese - 7.1 oz
  • Sour Cream - 10.6 oz
  • Rosemary - 10 stalks
  • Thyme - 10 stalks
  • Malt Vinegar - 2 spoons
  • Brown Sugar - 4 spoons
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Knead the dough using flour, two eggs, and salted butter. Wrap the dough in plastic wrap and place it in the refrigerator for half an hour to allow it to rise.

Step 2

Peel the garlic, place it in a pot with cold water, bring to a boil over heat, and simmer for another seven minutes. Remove the softened cloves and place them on a paper towel to dry.

Step 3

In a skillet, heat olive oil, add 40 grams of unsalted butter, then add garlic and leaves of rosemary and thyme. Sauté, stirring, for one minute. Add white or red wine vinegar, sugar, and half a liter of water. Caramelize the garlic for ten minutes.

Step 4

Mix the sour cream with three eggs, season with salt and pepper, and whisk together.

Step 5

Remove the dough from the refrigerator and place it in a greased silicone mold, spreading it evenly across the entire surface, including the edges. Trim any excess dough. Place it in an oven preheated to 392°F for fifteen minutes. To prevent the dough from bubbling or spreading, you can cover it with parchment paper and place an even layer of ceramic baking beans or regular large beans on top.

Step 6

Allow the crust to cool, then spread garlic with herbs and diced goat cheese (such as chevre) on top. Pour the egg and sour cream mixture over it. Bake for another thirteen minutes at the same temperature until golden brown.
