- Chicken Egg - 4 pieces
- Salt - to taste

- Leek - 1 piece
- Milk - 3 fl oz
- Nutmeg - a pinch

- Thyme - 1 sprig
- Garlic - 1 clove
- Ground Black Pepper - to taste
Step by Step guide

Prepare all the ingredients.
Step 2
Combine 250 grams of sifted flour, 1 egg, a pinch of salt, 30 grams of softened butter, and 5 tablespoons of water. Knead until you achieve a smooth and elastic dough.
Step 3
Wrap the dough in plastic wrap and refrigerate for 2 hours.
Step 4
Roll out the rested dough on a floured surface. The thickness of the resulting layer should be 5–7 mm.
Step 5
Lightly grease the baking pan with oil and line it with parchment paper.
Step 6
Spread the dough into the mold. Trim any excess dough with a knife, leaving a small edge.
Step 7
Prick the dough all over with a fork to prevent it from rising during baking.
Step 8
Place another sheet of parchment paper over the dough preparation and pour dry beans (or special ceramic baking beans) on top. Bake in the oven at 356°F for 15–20 minutes. Remove the weights from the baked crust and let it cool on a wire rack.

Cut off the green part of the leek (which can be used, for example, in broth) and the tip of the bulb. Rinse the white part thoroughly to remove any sand. Slice it into rings about 1 cm wide.

In a skillet, heat 30 grams of butter with a pinch of sugar, a sprig of thyme, and a crushed clove of garlic. Quickly sauté the onion until it turns golden brown. Cook the leeks carefully to prevent the rings from falling apart.

Cut the salmon into large cubes. Slice the shrimp in half lengthwise, removing the intestinal tract.
Step 12
In a bowl, whisk 3 eggs. Add Hochland culinary cream cheese and mix until smooth. Thanks to its high heat resistance, Hochland cream cheese will help the filling maintain its shape. Next, add milk, salt, pepper, and a pinch of nutmeg.
Step 13
Place the salmon and shrimp on the crust. Pour the cheese and egg filling on top.
Step 14
Carefully arrange the rings of leek. Place the quiche in the oven for 30 minutes at 356°F.
Step 15
Serve the finished quiche hot or cold.
