- Water - 8 fl oz
- Bittersweet Chocolate - 9.3 oz
- Sugar - 4 tablespoons

Take a large bowl, pour cold water into it, and add ice. Place a smaller bowl inside it. The bottom of the upper bowl should touch the ice.

Next, depending on how you will melt the chocolate:

STOVETOP. Break the chocolate into small pieces and place them in a medium-sized saucepan. Pour in water, add sugar and/or liqueur (if using), and melt the chocolate over medium heat, stirring occasionally. Pour the melted chocolate into the bowl and start whisking with a whisk or mixer until thickened.

MICROWAVE. Break the chocolate into small pieces in a bowl and melt it. Add a little water and start whisking with a whisk or mixer. Whisk the chocolate with water for a few minutes, gradually adding more water.
Step 5
Try to prevent the mousse from becoming grainy. If it does, pour it back into the saucepan, heat it until it's half melted, pour it back into the bowl, and whisk a little more with a whisk or mixer. In the end, you should have a mixture resembling 20% fat sour cream with air bubbles.
Step 6
Divide into four portions and serve immediately. Or pour the mousse into dessert cups and refrigerate. It only takes 30 minutes for the mousse to thicken.
