Description
Instead of baking soda, you can use baking powder. In addition to vanilla sugar, you can add a little vanillin. From the resulting dough, you can make 2 small kulichs with a diameter of 12-14 cm; I made 3 small ones and 9 in muffin tins.
Ingredients
- Wheat Flour - 14.1 oz
- Butter - 2.1 oz
- Milk - 10 fl oz
- Chocolate eggs - 2 pieces
- Powdered Sugar - 4.2 oz
- Vanilla salt - 1 teaspoon
- Meyer Lemon Juice - 4 tablespoons
- Activated Baking Soda - 1 teaspoon
- Raisins - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Prepare parchment paper and molds for the kulich.
Step 2
Melt the butter and let it cool.
Step 3
Beat the egg yolks with powdered sugar and vanillin, combine with the melted butter, and gradually add the lemon juice.
Step 4
Sift part of the flour, add baking soda, then milk, and then more flour (if you add all 400 g of flour at once, the dough will be too stiff).
Step 5
Add the yolks to the resulting dough (I whipped them with a mixer to avoid lumps in the dough).
Step 6
Soak the raisins in warm water, drain, and dust them with flour. Add the raisins to the dough.
Step 7
Whip the egg whites in a separate clean and dry bowl, adding a pinch of salt. Quickly fold the egg whites into the dough with a wooden or plastic spatula. Immediately distribute the dough into the prepared molds.
Step 8
Place the kulichs in a well-preheated oven for 50-60 minutes. Remove from the oven and let cool.
Step 9
Prepare any glaze, brush it on the kulichs, and decorate.
