Quick pie with Adyghe cheese and feta
Ingredients
- Wheat Flour - 2 cups
- Salted Butter - 4.4 oz
- 20% Sour Cream - 5 tablespoons
- Feta cheese - 1.8 oz
- English Dry Mustard - 1 teaspoon
- Adyghe cheese - 10.6 oz
- Herbes de Provence - to taste
Step by Step guide
Step 1
Mix softened butter with sour cream. Add sifted flour along with mustard powder. Knead the dough well, roll it into a ball, and wrap it in plastic wrap. Then place it in the refrigerator for 15 minutes.
Step 2
Grate the Adyghe cheese and feta. Prepare a 20 cm springform pan. No need to grease it, as there is enough fat in the dough. You can line it with parchment paper.
Step 3
Remove the dough. Separate 2/3 of it and roll it out to the size needed to line the bottom and sides of the pan. Place the dough in the pan, smooth it out, and prick it with a fork in several places. Add the filling and press it down slightly. Then roll out the remaining 1/3 of the dough to serve as the top layer. Sprinkle the layer with Herbes de Provence (basil, rosemary, thyme) and roll them into the dough with a rolling pin.
Step 4
Place the rolled-out dough layer on top of the filling. Pinch the edges of the dough and trim any excess. After that, it's best to pinch the edges again well; otherwise, the layers of dough may separate, and press down slightly on top. You can also prick the top layer with a fork to prevent bubbles.
Step 5
Bake in the oven on the middle rack at 392°F for 40 minutes — the finished pie should be golden brown.
