Quick Watermelon Jelly with Mint
Ingredients
- Gelatin - 0.2 oz
- Water - 2 fl oz
- Watermelon - 2 qt
- Coarse Salt - ¼ teaspoon
- Meyer Lemon Juice - 1.5 teaspoons
- Fresh Mint - to taste
Step by Step guide
Step 1
In a blender, puree the watermelon flesh until smooth. Strain through a sieve into a bowl — you should get about 720 ml of juice.
Step 2
Dissolve the gelatin in the water and let it sit for 5 minutes.
Step 3
In a small saucepan, bring 120 ml of watermelon juice with salt to a boil. Add the gelatin and stir until fully dissolved. Strain into a bowl and place it in a bowl of ice water for quicker cooling. Then add the remaining watermelon juice and lemon juice.
Step 4
Let it sit, stirring, for 15–20 minutes until the mixture starts to gel.
Step 5
Stir and divide into 4 dessert cups. Refrigerate until set. Serve garnished with mint.
