- Quince - 5 pieces
- Sugar - 8.8 oz
- Water - 17 fl oz
- Lemon - 1 piece
- White Beans - 1 piece
- Green peppercorns - 5 pieces

Step 1
In a large non-metallic pot, place the halved vanilla bean, pepper, sugar, lemon zest, and water. Set over medium heat and stir until the sugar dissolves, then reduce the heat.
Step 2
Peel the quince, cut it into quarters, and remove the seeds. Immediately immerse each prepared piece in the syrup so that it is fully covered by the liquid. Cover with parchment paper. Cook for 30 minutes until the quince becomes tender.
Step 3
Using a slotted spoon, transfer the quince to a bowl, and boil the syrup over high heat for 8-10 minutes until it reduces by one third. Drizzle the syrup over the quince. Serve warm or cold — with whipped cream.
