Description
In general, you can make quince jelly without adding pectin — it should set well on its own, but it's better to add it!
Ingredients
- Sugar - 1.5 cups
- Yellow pectin - 3 fl oz
- Water - 1 qt
- Quince - 3 lbs
- Meyer Lemon Juice - 2 fl oz
Step by Step guide
Step 1
Remove the core from the quince and chop it finely.
Step 2
Transfer the quince to a saucepan, add water, bring to a boil, reduce the heat, cover, and simmer for 15 minutes.
Step 3
Strain to obtain 4 cups of juice.
Step 4
Pour the juice back into the saucepan, add lemon juice and sugar. Bring to a boil, stirring, add pectin, and cook, stirring, for another minute. Remove from heat.
Step 5
Skim off the foam and pour into sterilized jars. Allow to set.
