Quince Jelly with Star Anise
Ingredients
- Star anise - 2 pieces
- Quince - 70.5 oz
- Water - 56 fl oz
- Sugar - 28.2 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Thoroughly wash the quince and cut it into small pieces. Transfer to a pot and cover with water. Bring to a boil, cover with a lid, reduce the heat, and simmer until very soft for about 3 hours.
Step 2
Strain through a sieve, squeezing out all the juice — you should get about 950 ml of juice (if you have more or less, just adjust the sugar accordingly at a ratio of 1:1).
Step 3
Pour the juice back into the pot and add sugar, lemon juice, and star anise. Bring to a boil and cook, skimming off the foam, until thickened and reaching a temperature of about 221°F.
Step 4
Pour into sterilized jars, seal, and let cool.
