Ingredients
- Salt - a pinch
- Quinoa - 8.8 oz
- Chicken Egg - 1 piece
- Spanish onions - 1 head
- Garlic Scapes - 1.4 oz
- Mild Chili Spice - 0.1 oz
- Glutinous Rice Flour - 2½ tablespoons
- Olive Oil - to taste
- Grated Pecorino Pepato Cheese - to taste
- Mint - 0.4 oz
- Sugar - 1 teaspoon
- Malt Vinegar - 3 tablespoons
- Water - 2 tablespoons
Step by Step guide
Step 1
Rinse the quinoa, cover with water in a 1:2 ratio, bring to a boil, and cook for eleven minutes. Let it cool.
Step 2
Add the lightly beaten egg, chili pepper, and medium red onion to the cooled quinoa. You can also add grated cheese. Mix everything well.
Step 3
Season the mixture with salt and add one tablespoon of rice flour. The mixture should be thick and sticky.
Step 4
Form thin burgers, lightly dust them with rice flour, and fry in olive oil.
Step 5
Mint Sauce: Boil clean water. While it heats, pluck all the mint leaves from the stems. If necessary, rinse them gently under running water.
Step 6
Place the leaves on a cutting board and start chopping them into pieces of about 1 centimeter. Then sprinkle with sugar and continue to chop.
Step 7
We need to chop the leaves very finely, almost to a paste-like consistency.
Step 8
Once the desired texture is achieved, place the mint in a bowl or deep plate and add hot water (not boiling). Let it sit for a maximum of 10 minutes. Then add vinegar, salt, mix thoroughly, taste, and add a little more sugar if necessary. The sauce is ready to serve.
