- Chicken Egg - 3 pieces
- Butter - 6 oz
- Wheat Flour - 8.5 oz
- Baking Powder - 0.4 oz
- Fructose - 6 oz
- Cognac - 3.5 oz
- Raisins - 7.1 oz
Step by Step guide
Step 1
Soak the raisins in cognac for about 20–30 minutes. Beat the butter with fructose until fluffy. Add the 3 eggs one at a time, beating well after each addition. Gradually add the flour sifted with baking powder. Mix well. Once the raisins have absorbed the cognac, add them to the batter.
Step 2
Pour the batter into a baking pan.
Step 3
Smooth the top and cut it with a spatula dipped in water. This is necessary to ensure that the top of the cake cracks evenly in the middle.
Step 4
Bake at 320°F for about 60 minutes. Check for doneness with a wooden stick; nothing should stick to it. Let the finished cake cool on a rack (to prevent it from becoming soggy). Dust the top with fructose powder.
