- Apple - 1 piece
- Honey - 4 tablespoons
- Lemon - 1 piece
- Egg white - 1 piece
- Buttermilk - 7 fl oz
- Frozen Raspberries - 4.1 oz
- Brown Sugar - 0.5 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease the muffin tin with butter.
Step 2
In a large bowl, sift together the flour, baking powder, baking soda, salt, and nutmeg. Grate the apple with the skin on, but without the core, into the bowl. Add honey and the grated lemon zest. Mix in the lightly beaten egg, then the buttermilk, raspberries, and sugar. Stir well.
Step 3
Fill the muffin cups three-quarters full with the batter and bake for about 20 minutes until done. Serve immediately.
