Description

Step 1
Mix the softened butter with sugar, but do not whip, just mix. Separately, beat the egg and add half of it to the butter and sugar mixture. Sift the flour and gradually add it to the other ingredients. Finally, you can add a little touch for improvisation: ground almonds or shredded coconut, for example.

The dough is ready; roll it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes. In the meantime, let's focus on the most delicious part—the filling.

This part is very simple! Take the raspberries, place them in a saucepan or a non-stick skillet, add a little sugar, and heat. It's better when the berries remain whole, as this gives the pie a fresh look. Once heated and the juice appears, you can remove it from the heat.
Step 4
Now we can return to the dough. Place parchment paper in a round baking pan. Lay out the dough, cover it with foil, and fill it with beans. Place it in the oven for 15 minutes.
Step 5
Remove the crust, take off the foil, and leave it in the oven to brown for another 8–10 minutes.
Step 6
When the crust is fully cooked, place the filling on top.
