Ingredients
- Wheat Flour - 3.5 oz
- Chopped almonds - 3.5 oz
- Butter - 3.5 oz
- Sugar - 1.8 oz
- Egg white - 1 piece
- Cream - 10.6 oz
- White Chocolate - 7.1 oz
- Egg white - 4 pieces
- Raspberry leaves - 8.8 oz
- Vanilla Pod - ½ piece
Step by Step guide
Step 1
For the dough, combine cold butter, flour, almonds, and sugar in a food processor.
Step 2
Chop into crumbs, then add the egg.
Step 3
Knead the dough (it will form a ball).
Step 4
Roll out the dough, transfer it to a mold, and refrigerate for half an hour. Prick the dough and bake at 392°F for 25 minutes.
Step 5
While it bakes, prepare the filling. Break the white chocolate into pieces.
Step 6
Pour boiling cream over it, and stir with a spatula until the chocolate is completely dissolved.
Step 7
Add the yolks to the warm mixture and stir until smooth.

Place the raspberries on the hot crust (set aside a few berries for decoration).

Pour the chocolate mixture over the raspberries.

Bake for 35 minutes at 320°F or until done. The surface should be set.

Cool, decorate with raspberries, and serve.
