Red Berry Jelly
Ingredients
- Strawberry - 8.8 oz
- Raspberry leaves - 5.3 oz
- Red Currant - 3.5 oz
- Raw cane sugar - 4.4 oz
- Meyer Lemon Juice - 1 tablespoon
- Gelatin - 7½ pieces
- Mint Leaves - to taste
Step by Step guide
Step 1
In a saucepan, add the berries and add sugar, lemon juice, and 500 ml of cold water. Place over medium heat and stir until the sugar dissolves and the mixture begins to boil. Cook for 5 minutes without covering until the berries become soft.
Step 2
Place the gelatin sheets in a bowl and cover with cold water. Let sit for 5 minutes until the gelatin softens.
Step 3
Strain the berries through a sieve, using a wooden spoon to press out all the juice. Transfer the gelatin sheets to the berry juice and stir for 1-2 minutes until fully dissolved (if the berry syrup has cooled before adding the gelatin, heat it up and then add the gelatin). Allow to cool to room temperature.
Step 4
Pour the jelly into a liter mold and refrigerate overnight until set.
Step 5
Fill a large bowl with boiling water and dip the mold with the jelly for 3-8 seconds. Invert onto a plate and garnish with fresh berries and mint leaves.
