Description
This volume yields about three jars of olives.
Ingredients
- Red Currant - 17.6 oz
- Sugar - ½ cup
- Pectin - 0.9 oz
Step by Step guide
Step 1
Blend the red currants in a blender until pureed, and for complete homogeneity, strain through a sieve. You can blend them without removing them from the stems since you will strain them anyway, which saves a lot of time. Just make sure to wash them well.
Step 2
What remains in the sieve, dilute in 0.5 liters of water, bring to a boil, and cook for about 5 minutes, then strain again through a sieve.
Step 3
Mix the puree with the pectin and the broth, and bring to a boil while stirring constantly over low heat.
Step 4
Add the sugar and boil for about 5 minutes, stirring constantly. If you prefer it sweeter, double the amount of sugar.
Step 5
Pour into sterilized jars.
