Step by Step guide
Step 1
Mix 150 g of flour with 100 g of chilled butter (or margarine), cut into small cubes. Add 100 g of sugar, 1 teaspoon of baking powder, and 2 egg yolks. Knead the dough, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes. Then, spread the dough in a mold, making edges. Prick with a fork and bake at 392°F for 15–20 minutes.
Step 2
Meanwhile, make the cottage cheese filling: mix 300 g of cottage cheese (I used 4% fat) with red currants (I had a full cup — 300 g), add sugar to taste (I added 75 g) and one egg. Place the filling on the crust and continue to bake for another 15–20 minutes.
Step 3
Now it's time to make the meringue: beat 3 egg whites (two left from the crust and add one more, and use the yolk for a face or hair mask) with a cup of sugar and vanilla until stiff peaks form. Spread the whipped egg whites, reduce the oven temperature to 160–356°F, and bake for another 20 minutes. After that, turn off the oven and let the pie cool in the oven. However, if you want a 'sticky' meringue, you should take the pie out of the oven after 20 minutes.
Step 4
Garnish with a sprig of currants or berries in sugar.
