Ingredients
- Lentils - 7.1 oz
- Water - 1 qt
- Turmeric - ½ teaspoon
- Toasted Cumin Seeds - 1 teaspoon
- Vegetable Oil - 5 tablespoons
- Garlic - 3 cloves
- Onion - 1 head
- White Cabbage - 8.1 oz
- Ground ancho chili pepper - 2 pieces
- Salt - 1½ teaspoons
- Potato - 1 piece
- Grated Ginger Root - ½ teaspoon
Step by Step guide
Step 1
Place the lentils in a pot with water and bring to a boil. Remove the foam. Add turmeric and mix well. Reduce the heat, cover with a lid leaving a small gap, and cook the lentils for 1 hour and 15 minutes, stirring every 30 minutes.
Step 2
While the lentils are cooking, heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them sit for 3-4 seconds. Add the minced garlic and let it brown slightly. Then add the finely chopped onion, thinly sliced cabbage, and minced chilies. Mix well and sauté for about 10 minutes until the cabbage is browned and slightly crispy. Add 0.5 teaspoons of salt and turn off the heat.
Step 3
To the cooked lentils, add 1.25 teaspoons of salt, the finely chopped tomato, and ginger. Mix well, cover with a lid, and cook for another 10 minutes. Then add the cabbage and oil from the pan and bring to a boil. Heat for 2-3 minutes without covering and serve.
