Red Velvet Cake
Ingredients
- Chicken Egg - 4 pieces
- Sugar - 7.1 oz
- Wheat Flour - 2.1 oz
- Starch film - 0.7 oz
- Cocoa Powder - 1.1 oz
- Butter - 1.1 oz
- 10% cream - 10 fl oz
- White Chocolate - 3.5 oz
- Raspberry leaves - 3.5 oz
- Red Food Coloring - 1 tablespoon
Step by Step guide
Step 1
Beat 4 egg yolks with 50 grams of sugar until light and fluffy.
Step 2
In a separate bowl, whip the egg whites until stiff peaks form, then gradually add 50 grams of sugar and continue to whip until the mixture is thick and glossy.
Step 3
Combine both mixtures.
Step 4
Sift together and add 60 g of flour, 20 g of cornstarch, and 30 g of cocoa powder to the mixture.
Step 5
Stir with a spoon from the edge to the center, folding the dough into the middle of the bowl.
Step 6
Add 30 g of melted, not hot, butter and food coloring along the edge, then mix.
Step 7
Pour the batter into a greased and floured pan (20-23 cm).
Step 8
Bake for 25 minutes at 180-392°F, and check with a skewer.
Step 9
Cool for 5 minutes in the pan, then transfer to a wire rack.
Step 10
Let it rest for at least 8 hours to firm up the crumb, and then cut it in half.
Step 11
Whip 300 ml of cream, add the remaining sugar, mix well, and spread it over the cake.
Step 12
Cover with the second half and completely coat with cream.
Step 13
Sprinkle with grated chocolate and garnish with berries (just before serving).
