Description

The amount of food coloring depends on the type of coloring, the manufacturer's brand, and the desired color intensity — approximately 2 drops per 100 g of batter.

Ingredients

  • Wheat Flour - 12 oz
  • Sugar - 10.6 oz
  • Cocoa Powder - 1 tablespoon
  • Salt - 1 teaspoon
  • Baking Powder - 2 teaspoons
  • Activated Baking Soda - 1 teaspoon
  • Farm fresh eggs - 3 pieces
  • Vegetable Oil - 10 fl oz
  • Kefir - 7 fl oz
  • Heavy cream - 2 fl oz
  • Red Food Coloring - 0.4 oz
  • Butter - 3.5 oz
  • Powdered Sugar - 8.8 oz
  • Mascarpone Cheese Unagrande - 8.8 oz
  • Semi-soft cream cheese - 14.1 oz

Step by Step guide

Step 1

Sift all dry ingredients except for the sugar twice. Use fine salt.

Step 2

Add sugar, eggs, kefir, heavy cream, and vegetable oil. Mix thoroughly in a mixer or by hand for about 4 minutes.

Step 3

Gradually add the food coloring until the desired shade is achieved.

Step 4

Pour the batter into a baking pan and place it in an oven preheated to 338°F for 15–20 minutes. The number of layers depends on the diameter and depth of the pan. Do not make the layers too thick; they will not bake properly.

Step 5

For the cream: 4 hours before preparation, take the butter out of the refrigerator and let it soften at room temperature. Then whip it into a creamy consistency for about 2–3 minutes.

Step 6

Add the mascarpone and cream cheese and mix until smooth. Gradually add the powdered sugar. Don't add it all at once, as it will be difficult to mix. Alternatively, you can just use a mixer.

Step 7

When the layers are completely cool, trim the tops of one or two layers, remove the red crumb from the tops, and grind it into crumbs in a food processor. If the cake is not decorated with red crumbs, you can skip trimming the tops.

Step 8

Using a piping bag or simply a spoon, spread the cream evenly over each layer. Coat the top layer and sides with a not-too-thick layer of cream.

Step 9

Decorate the cake with red crumbs and remaining cream.
