Ingredients
- Sugar - 1⅒ cup
- Water - 1 cup
- Meyer Lemon Juice - 3 tablespoons
- Rhubarb - 15.9 oz
- Light Corn Syrup - 2 tablespoons
Step by Step guide
Step 1
In a small saucepan, combine sugar, water, and lemon juice. Place over low heat and stir until the sugar dissolves. Increase the heat and bring to a boil.
Step 2
Add the rhubarb, cut into small pieces, and cook until soft, about 10 minutes.
Step 3
Transfer the mixture to a food processor and puree until smooth.
Step 4
Add the corn syrup and let cool for 1 hour.
Step 5
Transfer the mixture to an ice cream maker and freeze.
