- Fat - 0.4 oz
- Milk - 20 fl oz
- Rhubarb - 9.5 oz
- Sugar - 5.6 oz
- Egg white - 12 pieces

Bake the cleaned and washed rhubarb stalks in the oven until soft for 20-25 minutes, then strain through a sieve, mix with sugar, and cook well until it thickens into a syrupy consistency. While hot, gently fold into the whipped egg whites.
Step 2
Transfer the prepared mixture to a greased baking dish, and use a piping bag to create a design on top with the same mixture. Before serving, bake in the oven at 392°F until a golden crust forms on the surface.
Step 3
Serve the soufflé dusted with powdered sugar, accompanied by cold milk.
