Rhubarb Tartlets
Ingredients
- Wheat Flour - 4.4 oz
- Sugar - 5.3 oz
- Butter - 1.8 oz
- Salt - to taste
- Vanillin - to taste
- Whole egg - 1 piece
- Rhubarb - 7.1 oz
- Gelatin - 4 pieces
- Cinnamon - a pinch
- Cream - 8 fl oz
- Liquid dark chocolate - 3.5 oz
- Pistachios - 1.8 oz
Step by Step guide
Step 1
Prepare the dough from flour, one third of the sugar, yolk, and softened butter. Add salt and vanillin. Refrigerate the dough for 1 hour.
Step 2
Wash and sort the rhubarb stalks and cut them into small pieces. Mix with sugar and add water (3–4 tablespoons). Add salt, cinnamon, and cook for about 10 minutes.
Step 3
Soak the gelatin in warm water, squeeze it out, and add it to the rhubarb syrup. Mix thoroughly and cool the mixture.
Step 4
Preheat the oven to 428°F.
Step 5
Place the thinly rolled dough into greased molds. Prick the dough with a fork and bake in the lower part of the oven for about 20 minutes.
Step 6
Melt the chocolate in a water bath and brush the inside of the cooled tartlets.
Step 7
Whip the cream and combine it with the rhubarb mixture. Fill the tartlets with the cream and sprinkle with chopped nuts.
