Description
Rice chips are an unusual snack, light and crispy with a very interesting flavor.
Ingredients
- Long-Grain Rice - 2.8 oz
- Wheat Flour - 1.8 oz
- Milk - 5 fl oz
- Green peppercorns - 1 teaspoon
- Powdered Sugar - 1.4 oz
- Salt - a pinch
- Vanilla salt - 0.4 oz
- Lemon - ½ piece
Step by Step guide
Step 1
Grind the rice in a coffee grinder to a flour consistency.
Step 2
Mix together the rice flour, wheat flour, powdered sugar, vanilla sugar, and salt.
Step 3
Crush the pepper or blend it until you have coarse pieces, and toast in a dry skillet for 1–2 minutes. Squeeze the lemon juice into the skillet and toast for another minute. Add the pepper and milk to the flour mixture and stir.
Step 4
Using a teaspoon, spread the dough onto a silicone mat or a baking sheet lined with parchment paper in thin circles.
Step 5
Place in a preheated oven at 302°F and bake for about 10 minutes, until the edges start to brown.
