Rice Flour Ice Cream
Ingredients
- Glutinous Rice Flour - 2 tablespoons
- Sugar - 10.6 oz
- Milk - 2 qt
- Vanillin - a pinch
- Cardamom - a pinch
- Chopped almonds - 4 tablespoons
Step by Step guide
Step 1
Mix the rice flour and 6 tablespoons of milk until smooth.
Step 2
Boil the remaining milk for about 45 minutes, until the volume is reduced by one third.
Step 3
Add the rice mixture, pistachios, and sugar.
Step 4
Boil for another 10 minutes. Remove from heat, add cardamom and vanillin.
Step 5
Cool to room temperature, then pour into molds and place in the freezer.
Step 6
Every 20–30 minutes, stir the ice cream to break up any ice crystals until the mixture thickens completely.
Step 7
Serve slightly softened, as this ice cream is significantly harder than regular ice cream.
