Description

All you need to do is cook the rice in milk, previously flavored with lemon zest. Then, spoon the mixture into molds and top the rice with a fluffy meringue before baking until golden brown. Remove from the oven, let cool, and serve alongside morning cocoa for the kids or with a shot of limoncello for the adults.
Ingredients
- Butter - 0.7 oz
- Chicken Egg - 3 pieces
- Lemon - 1 piece
- Rice - 5.3 oz
- Sugar - 3.5 oz
- Milk - 1 qt
Step by Step guide
Step 1
Bring the milk to a boil, add sugar and the zest of one lemon, whisk the mixture, then add the rice and cook for five minutes, stirring continuously.
Step 2
Preheat the oven to 176°F and place the pot with rice inside for about an hour.
Step 3
Grease the pudding molds with butter on the inside and place them in the refrigerator. After an hour, take out the rice and let it cool at room temperature for half an hour.
Step 4
Separate the egg whites from the yolks. Mix the yolks with the rice. Whisk the egg whites and combine them with the rice as well.
Step 5
Divide the pudding into molds and place them in an oven preheated to 176°F for ten minutes. Serve warm.
