Rice pudding with mango sauce

Ingredients

  • Vanilla Bean - 1 piece
  • Round Rice - 8.8 oz
  • Coconut Milk - 23 fl oz
  • Milk - 10 fl oz
  • Sugar - 1.4 oz
  • Salt - a pinch
  • Coconut flakes - 3.5 oz
  • Mango - 1 piece
  • Canned Mango - 1 can
  • Honey - 1 teaspoon

Step by Step guide

Step 1

Split the vanilla bean, scrape out the seeds, and place everything in a pot. Add the rice, coconut milk, and milk. Bring to a boil and simmer on low heat for about 20 minutes, stirring frequently. At the end, add sugar and salt, and stir well.

Step 2

Dice the mango. Blend the canned mango with its juice and honey, then mix with the fresh mango pieces.

Step 3

Serve the coconut rice topped with the mango sauce. Toast the coconut flakes in a pan and sprinkle on top.
